question: how to change domain owner

i'm working for the company Beate Uhse AG, germany, area domain
administration.
Beate Uhse AG lay claim to the domain beate-uhse.it. The owner at the
moment, Mr. Schmidhofer, will give us this domain.
Please let me know, how we can change the owner (admin c) of this domain as
quickly as possible; which documents are necessary for this procedure.
